Ingredients
Prepare the following
- 1 Cauliflower
Use one medium-sized head. Chopped up into small florets. - 1 Cup Onion
Chopped up finely. Can use less if you are making this for a wee one. - ¼ Cups Salted Butter
- 1 Chicken Broth
Use a large 1 Litre tetrapack - 2 Cups Milk
Or cream if so desired
Method
In a large pot or Dutch oven
- 1 Cauliflower

Use a large 1 Litre tetrapack - 2 Cups Milk

Melt the butter in the pot and add the onions, stirring until lightly browned. Add the cauliflower and cover to steam and partially cook. Stir regularly, ensuring that the cauliflower doesn't brown.
Add the chicken broth to the pot. If desired, and if the cauliflower was quite large, you can even add additional broth. Simmer with the lid on until the cauliflower is quite soft.
Remove the pot from the heat and use an immersion blender to puree the soup, removing the chunks. Return to the stove and add the milk, heating through. Do not boil.
If desired, salt can be added to taste, but for little ones, leaving out the salt is preferred.
