- 4 Cups Basil
packed fresh leaves, destemmed, washed and spun - 4 Garlic Cloves
peeled - ⅓ Cups Red Wine Vinegar
- 4 Tbsp Dijon Mustard
- 1 Cup Olive Oil
- 1½ Tsp Fine Salt
Method
In the Blender
- 4 Cups Basil
packed fresh leaves, destemmed, washed and spun - 4 Garlic Cloves
peeled - ⅓ Cups Red Wine Vinegar
- 4 Tbsp Dijon Mustard
- 1 Cup Olive Oil
- 1½ Tsp Fine Salt

Place all ingredients into the blender and slowly add the oil until everything is transformed into a pourable mixture with no visible chunks. You may have to stop the blender several times to scrape down any basil leaves that stick to the blender sides.
Note: The vinaigrette can be stored in a jar in the refrigerator for a month or more. You can also be frozen in small containers then thawed for use and remarkably the vibrant green colour does not change. Makes an unusual, but delicious, hostess gift.
