  • 6 Cups Milk
  • Cups White Sugar
    can replace with monkfruit sugar substitute instead
  • ¾ Cups Short Grain White Rice
  • ½ Cups Dried Cranberries
  • Tsp Vanilla Extract
Vanilla Rice Pudding with Dried Cranberries

Method

In a saucepan

  • 6 Cups Milk
  • Cups White Sugar
    can replace with monkfruit sugar substitute instead
  • ¾ Cups Short Grain White Rice
  • ½ Cups Dried Cranberries
  • Tsp Vanilla Extract

Place milk, sugar, and rice into a 4 quart saucepan and watch carefully as the mixture comes to a boil. Lower to a low rolling boil, stirring occasionally, until the mixture thickens somewhat.

Reduce the heat to low, and stir every 5 minutes. It's a good idea to set a timer to remind yourself as you don't want the rice to boil over.

When the mixture is creamy and still runny but on the point of sticking to the pot, remove from the heat and stir in the cranberries and vanilla extract.

Transfer to a container and, when cool, store covered in the refrigerator.

Makes twelve 1/2 cup servings.
