Method

rinse and pat dry, pluck and tuck wings behind back
put neck and giblets apart for gravy
Stuffing

cook onion, celery, carrots, bacon ends, lots of butter (half a cup or more), mushrooms until soft
cut up bread cubes (can use old, dry bread), sage and/or poultry seasoning, salt and pepper in a large bowl
combine wet and dry with frozen cranberries, eggs, milk. Add eggs and milk as needed until moist enough.

put butter or bacon on legs and chest
stuff head and body cavities and pin flaps shut. Make sure tail is trussed up, can tie legs up.
25 minutes a pound when stuffed (Canadianturkey.ca)
leftover stuffing can be cooked via microwave (~20min)
