Ingredients

Tomato Sauce

  • 1 Onion
    Large, chopped
  • 2 Tbsp Salted Butter
  • 2 Garlic Cloves
    Minced
  • 398 mL Tomato Sauce
    Can also cook down chopped fresh tomatoes

Mushroom Cheese Sauce

  • 3 Tbsp Salted Butter
  • 2 Cups Mushrooms
    Or use a can of drained mushrooms
  • Cups All Purpose Flour
  • 2 Cups Milk
  • ¼ Cups Green Onion
    Finely chopped
  • 1 Cup Parmesan Cheese
    Can replace with Mozzarella or other white cheese
  • 1 Tsp Fine Salt
  • ½ Tsp Black Pepper

Tortellini

  • 750 Grams Tortellini
    Plain or rainbow-style Tortellini
  • 1 Tsp Fine Salt
  • 1 Cup Mozarella
    Grated, can mix with parmeasan
Tortellini Tomato and Mushroom Cheese Sauce Casserole

Method

In a pot

  • 1 Onion
    Large, chopped
  • 2 Tbsp Salted Butter
  • 2 Garlic Cloves
    Minced
  • 398 mL Tomato Sauce
    Can also cook down chopped fresh tomatoes

Melt the butter and saute the onions and garlic until cooked. Add the tomato sauce to the pot and simmer gently for another 10 minutes. Spread across the bottom of a 9 x 12" baking dish.

  • 3 Tbsp Salted Butter
  • 2 Cups Mushrooms
    Or use a can of drained mushrooms
  • Cups All Purpose Flour
  • 2 Cups Milk
  • ¼ Cups Green Onion
    Finely chopped
  • 1 Cup Parmesan Cheese
    Can replace with Mozzarella or other white cheese
  • 1 Tsp Fine Salt
  • ½ Tsp Black Pepper

Melt the butter in a small saucepan and add the mushrooms and green onions to saute. When the mushrooms are cooked, and any liquid has evaporated, stir in the flour to create a roux. Cook for a few minutes then slowly add the milk, stirring to prevent lumps and thicken. Add the parmesan cheese, salt and pepper cooking for a few minutes until the cheese melts.

  • 750 Grams Tortellini
    Plain or rainbow-style Tortellini
  • 1 Tsp Fine Salt
  • 1 Cup Mozarella
    Grated, can mix with parmeasan

Bring a large pot of salted water to a boil and cook the tortellini until just cooked. Drain and return to the pot. Stir the cheese sauce into the cooked tortellini and then carefully spoon this mixture over the tomato sauce. Do not mix together. Sprinkle the pan with mozarella and/or parmesan cheese.

Bake in a 350 F oven until the mixture bubbles and cheese is golden.

Note: This recipe is a delicious one to prepare in advance to serve to company.
