Ingredients
Pudding
- 1 Tbsp Ghee
or butter - ¼ Cups Dried Fruit & Nuts
almonds, cashews, raisins - 1 Cup Short Grain White Rice
or long grain basmati rice, optionally crushed in a blender - 6½ Cups Milk
full fat milk - 5 Cardamom Pod
crushed, or cardamom powder - ¼ Cups White Sugar
- 1 Tsp Saffron
Mix with half a cup of warm milk later on - ½ Tsp Nutmeg
- 1 Sprinkle Rose Petals

Method
In a deep bottomed pot
- 1 Tbsp Ghee
or butter - ¼ Cups Dried Fruit & Nuts
almonds, cashews, raisins

Heat ghee in a heavy bottomed pot. Fry cashew, almonds, and raisins until golden. Remove and keep aside.
Cook Rice
- 1 Cup Short Grain White Rice
or long grain basmati rice, optionally crushed in a blender - 6½ Cups Milk
full fat milk

Rinse 1 cup of rice, and add to pot. Optionally fry for 2 minutes.
Add milk and bring to a boil, stirring frequently. Reduce heat and cook for 25-30 minutes until rice is soft and mushy.
Add Mixins
- ¼ Cups Dried Fruit & Nuts
almonds, cashews, raisins - 5 Cardamom Pod
crushed, or cardamom powder - ¼ Cups White Sugar
- 1 Tsp Saffron
Mix with half a cup of warm milk later on

Add crushed cardamom (without shells), nutmeg powder, saffron, sugar, and half of the fried dry fruit. Mix well and cook for another 5 mins. Let cool until kheer thickens.
Serve warm or chilled, and garnish with the remaining fried fruit, and optional rose petals.
