Method
Prepare the casserole
- 2268 Grams Potatoes
or 9 large ones - 227 Grams Cream Cheese
1 pkg., softened - 1 Cup Sour Cream
- 1 Tsp Salt
- 1 Pinch Pepper
- 2 Tbsp Butter

Slice and boil the potatoes. Mash very fine and reserve potato water for stuffing if needed.
Add ingredients, folding cream cheese in at the end.
Put into large casserole greased with butter. Dot with more butter.

Bake, covered at 350° for 30 minutes.
If making ahead, cover with plastic wrap and refrigerate or freeze. Thaw before baking.
