  • 3 Cups All Purpose Flour
  • ½ Tsp Fine Salt
    can omit if you use salted butter
  • ¾ Cups Shortening
    or lard
  • ½ Cups Butter
    cold
  • ½ Cups Water
    ice cold

Method

In the food processor

  • 3 Cups All Purpose Flour
  • ½ Tsp Fine Salt
    can omit if you use salted butter
  • ¾ Cups Shortening
    or lard
  • ½ Cups Butter
    cold
  • ½ Cups Water
    ice cold

Measure the flour and salt into a food processor. Add the shortening and butter and whiz only until the fats are mixed. Do not overprocess!

Place a few ice cubes in a cup of water until chilled. Remove ice cubes.

Add1/2 cup of water and briefly process. Continue to add water in small amounts until it clumps together. Immediately stop the food processor so that you don't overwork the dough. Overworking will result in a tough pastry.

Empty the pastry dough onto a piece of waxed paper and wrap up. Place in the fridge to chill until use.
