  • 1 Carrot
    peel, grate coarsely for about 1 cup
  • 1 Apple
    peel, core and chop into small chunks
  • 4 Cups Water
  • 2 Cups Steel Cut Oats
  • ½ Cups Raisins
  • ¼ Cups Shredded Coconut
    or more if desired
Carrot Cake Overnight Oatmeal

Method

In a lidded pot

  • 1 Carrot
    peel, grate coarsely for about 1 cup
  • 1 Apple
    peel, core and chop into small chunks
  • 4 Cups Water
  • 2 Cups Steel Cut Oats
  • ½ Cups Raisins
  • ¼ Cups Shredded Coconut
    or more if desired

Bring water to a boil. Add in prepared carrot and apple and bring back to a boil for about 1-2 minutes.

Stir in the steel cut oats, raisins, and coconut. Turn off the heat and put on the lid. Leave the pot on the stove overnight and wake up to breakfast ready to go!
