In a small saucepan

In small, very heavy saucepan, combine eggs, sugar, lemon juice, rind and butter. Cook at just below a boil, stirring almost constantly, until thick enough to thickly coat a spoon, about 15 minutes. (Mixture will thicken when cold.) Let cool, then store in covered jar in refrigerator. Makes about 1-1/2 cups (375 mL).
