  • 450 Grams Lamb
  • 3 Onions
    medium sized
  • 3 Tomatoes
    chopped
  • 3 Tbsp Ginger Garlic Paste
    or freshly minced
  • 2 Bay Leaf
  • 4 Cloves
  • 2 Pinches Cumin Seeds
  • 3 Tbsp Vegetable Oil
  • 1 Tsp Turmeric Powder
  • 1 Tbsp Coriander Powder
  • 1 Tsp Cumin Powder
  • 1 Tbsp Garam Masala
  • 3 Tbsp Lime Juice
  • ½ Cups Curd
    Curd is plain yogurt.
  • 2 Tbsp Kashmiri Mirch
  • 2 Tbsp Meat Masala
  • 1 Tbsp Fine Salt
  • 2 Tbsp Ginger Garlic Paste
  • 2 Tbsp Ghee
  • 1 Tbsp White Sugar
Lamb Curry

Method

In a large bowl

  • 450 Grams Lamb
  • 3 Tbsp Vegetable Oil
  • 1 Tsp Turmeric Powder
  • 1 Tbsp Coriander Powder
  • 1 Tsp Cumin Powder
  • 1 Tbsp Garam Masala
  • 3 Tbsp Lime Juice
  • ½ Cups Curd
    Curd is plain yogurt.
  • 2 Tbsp Kashmiri Mirch
  • 2 Tbsp Meat Masala
  • 1 Tbsp Fine Salt
  • 2 Tbsp Ginger Garlic Paste

Marinate the lamb using all of the spices, lime juice, curd(1/2 cup). 2.2kg lamb is enough for 6 people. Keep aside for 1-2 hours.

Start off by finely dicing the two onions.

Chop ginger and garlic. Or, alternatively use the paste. Add green chillies ( optional).


In a pan

  • 3 Onions
    medium sized
  • 3 Tomatoes
    chopped
  • 3 Tbsp Ginger Garlic Paste
    or freshly minced
  • 2 Bay Leaf
  • 4 Cloves
  • 2 Pinches Cumin Seeds
  • 3 Tbsp Vegetable Oil
  • 2 Tbsp Ghee
  • 1 Tbsp White Sugar

Add vegetable oil in a pot and add some cumin seeds and cloves. Once it starts to crackle add the onions. Fry the onions until it’s brown.

Once the onions are ready, turn the heat down. Add ginger garlic paste and fry until the raw smell goes away.

Add the meat and fry for 15 minutes.
Add the tomatoes, sugar, and ghee. Sauté for 5 minutes.

Cover the pot (a small gap remains) for 45 minutes and let everything simmer. Keep stirring every few minutes.

Serve with garlic naan/ roti or rice.
