  • 235 Grams Kokkien Noodles
  • 300 Grams Salmon Fillet
    Skinless, boneless salmon fillet (1 piece per person)
  • 10 To Taste Prawns
    Optional
  • ¼ Cups Malaysian Laksa Paste
    A green curry paste found in packet or tub form. Check spice level.
  • 1 To Taste Fish Sauce
    Or green curry
  • 400 mL Coconut Milk
  • Cups Fish Stock
    Or vegetable stock
  • 4 Tbsp Lime Juice
  • 454 Grams Bok Choy
    Can use up to one bunch per person
  • 2 Cups Bean Sprouts
  • 4 Green Onions
    Chopped into 2-3" pieces
  • 1 To Taste Fresh Ginger
    Sliced
  • 2 Carrots
    Sliced into thin diagonal pieces. At least 6 pieces per person.

Method

In a large bowl

  • 235 Grams Kokkien Noodles

Place the dry noodles in a bowl to have them ready. Just before serving, cover them with boiling water. Allow to sit for 5 minutes. Drain, and divide into bowls before adding the soup and ingredients.

In a skillet

  • 300 Grams Salmon Fillet
    Skinless, boneless salmon fillet (1 piece per person)
  • 10 To Taste Prawns
    Optional

Cook salmon, cut into a piece per person. Cook prawns if serving. Set aside.

In a large pan

  • 454 Grams Bok Choy
    Can use up to one bunch per person
  • 4 Green Onions
    Chopped into 2-3" pieces
  • 2 Carrots
    Sliced into thin diagonal pieces. At least 6 pieces per person.

Quickly stir fry the bok choy, onions, squash, and any other vegetables. Remove from heat and cover to finish cooking.

In a large pan

  • ¼ Cups Malaysian Laksa Paste
    A green curry paste found in packet or tub form. Check spice level.
  • 400 mL Coconut Milk
  • Cups Fish Stock
    Or vegetable stock
  • 4 Tbsp Lime Juice
  • 2 Cups Bean Sprouts
  • 1 To Taste Fresh Ginger
    Sliced

Cook laksa paste, oil, and the finely chopped ginger until fragrant.

Add coconut milk and stock, simmer.

Add bean sprouts, cook briefly, add lime juice, and stir in pre-cooked veggies to reheat. Remove from heat.

Ladle the hot soup and vegetables over the noodles.

Top with salmon and bean sprouts.

Serve with lime wedges, parsley, or coriander. Thai basil is a also a great option if available.
