Roti
- 2 Cups All Purpose Flour
- 1 Tbsp Vegetable Oil
- 2 Tsp White Sugar
- 1 Tsp Fine Salt
Chicken
- 4 Chicken Breasts
- 2 Tsp Garam Masala
- 3 Tsp Red Chilli Powder
- 2 Tsp Chicken Masala
- 1 Tsp Turmeric Powder
- 1 Tsp Cumin Powder
- 1 Tsp Coriander Powder
- 2 Tsp Fine Salt
- 1 Tbsp Mustard Oil
- 2 Tbsp Lemon Juice
Frying & Serving
- 1 Tbsp Mustard Oil
- 1 Red Onion
Finely Sliced - 1 Tbsp Ginger Garlic Paste
- ¼ Cups Cilantro
Chopped - 8 Eggs
- 1 Lemon
- 2 Tbsp Maggi Hot & Sweet Tomato Chilli Sauce
- 3 Newspaper

Method
In a medium sized bowl
- 2 Cups All Purpose Flour
- 1 Tbsp Vegetable Oil
- 2 Tsp White Sugar
- 1 Tsp Fine Salt
In a medium-sized bowl, combine all-purpose flour with vegetable oil, sugar, and salt. Dry mix these ingredients. Gradually add water as needed to form a dough. Cover the bowl and let the dough rest for at least 30 minutes.
In another medium sized bowl
- 4 Chicken Breasts
- 2 Tsp Garam Masala
- 3 Tsp Red Chilli Powder
- 2 Tsp Chicken Masala
- 1 Tsp Turmeric Powder
- 1 Tsp Cumin Powder
- 1 Tsp Coriander Powder
- 2 Tsp Fine Salt
- 1 Tbsp Mustard Oil
- 2 Tbsp Lemon Juice
Cut chicken breasts into bite-sized pieces. Marinate the chicken with spices: garam masala, red chilli powder (kashmiri mirch), chicken masala, turmeric powder, cumin powder, coriander powder, salt, mustard oil, and the juice from half a lemon. Cover and let sit for at least 30 minutes.
In a large frying pan
- 1 Tbsp Mustard Oil
- 1 Red Onion
Finely Sliced - 1 Tbsp Ginger Garlic Paste
- ¼ Cups Cilantro
Chopped
Heat mustard oil in pan over medium heat, and add sliced red onion along with ginger garlic paste. Add the marinated chicken and cook until done, about 15 minutes. Stir in chopped cilantro towards the end.
In medium frying pan
- 8 Eggs
Scramble 2 eggs at a time seasoned with salt and pepper. Once scrambled eggs begin to cook, place the previously prepared roti on top of the eggs, then flip to combine.
Assemble the rolls
- 1 Lemon
- 2 Tbsp Maggi Hot & Sweet Tomato Chilli Sauce
- 3 Newspaper
Full Page Spreads
Assemble the rolls by placing the roti on a surface, adding the cooked chicken, and topping with masala sauce, with a squeeze of lemon juice. Roll them up.
Serve the rolls wrapped in newspaper for an authentic street food experience.
