  • 10 Beets
    Washed, boiled until tender, peeled
  • 4 Tbsp Red Wine Vinegar
  • 4 Tbsp Olive Oil
  • 1 Cup Feta Cheese
    Crumbled
  • ½ Cups Walnuts
    Toast to add flavour.
Cold Beet Salad

Method

  • 10 Beets
    Washed, boiled until tender, peeled
  • 4 Tbsp Red Wine Vinegar
  • 4 Tbsp Olive Oil
  • 1 Cup Feta Cheese
    Crumbled

Sliced the cooled beets into julienne strips and place in a mixing bowl.

Gently toss with vinegar and oil. Add more vinegar if desired. Add salt and pepper to taste.

You can also garnish with chopped parsely or green onions.

Keeps well in the fridge.

Tip: To speed up the process you can slice peeled, raw beets with a mandolin and cook in the microwave in a covered dish with a few tablespoons of water.
