Ingredients
Batter
- 1 Cup Butter
- ½ Cups White Sugar
- ¾ Cups Brown Sugar
- 1 Egg
- 1 Tsp Vanilla Extract
- 1¾ Cups All Purpose Flour
- 1½ Cups Oatmeal
- 1 Tsp Baking Soda
- 1 Tsp Baking Powder
Mixins
- 1 Cup Chocolate Chips
- 1 Cup Shredded Coconut
- 1 Cup Walnuts
- 1 Cup Dried Cranberries
Method
In a stand mixer
- 1 Cup Butter
- ½ Cups White Sugar
- ¾ Cups Brown Sugar
- 1 Egg
- 1 Tsp Vanilla Extract
- 1¾ Cups All Purpose Flour
- 1½ Cups Oatmeal
- 1 Tsp Baking Soda
- 1 Tsp Baking Powder
Beat butter, white and brown sugar, eggs, and vanilla extract until nice and fluffy. Next mix in coconut.
Finally, add flour, oatmeal, baking soda, baking powder all at once.
- 1 Cup Chocolate Chips
- 1 Cup Walnuts
- 1 Cup Dried Cranberries
Add the chocolate chips, walnuts, and dried cranberries to the dough and just combine on a low setting. If desired you can remove the mixing bowl from the stand mixer and add these ingredients by hand.
Use a soup spoon or 1 1/2 tablespoon cookie scoop to measure out the dough and place the cookies on a baking sheet. The dough can be crumbly, so ensure that each cookie has some integrity. Push together if necessary but don't roll or smooth out the cookies. They will spread as they bake so ensure that there is some space around them.
Bake at 350ºF for about 12-17 minutes until slightly brown. Baking time will depend on your oven.
Allow to cool for several minutes and then use a spatula to remove to a wire rack to finish cooling.
