  • 8 Cups Blueberries
    frozen, thawed
  • 1 Cup White Sugar
  • 1 Orange Zest
  • ½ Cups Cornstarch
  • 1 Whipping Cream
    1 Litre carton, whipped
  • 4 Tbsp Icing Sugar
Christmas Morning Blueberry Crêpes

Method

Blueberry Filling

  • 8 Cups Blueberries
    frozen, thawed
  • 1 Cup White Sugar
  • 1 Orange Zest
  • ½ Cups Cornstarch

Place the frozen blueberries in a large pot to thaw overnight. Keep the juice as this will help to make the sauce.

In the morning, add the white sugar and zest to the blueberries and bring to a boil on the stove top, cooking to release some of the juices.

Mix the cornstarch with cold water to form a paste and add to the filling as needed to slightly thicken. You may need less or more cornstarch if the blueberries depending on the juice content of the blueberries. Simmer for a few minutes until cooked, then turn off the heat.

Topping

  • 1 Whipping Cream
    1 Litre carton, whipped
  • 4 Tbsp Icing Sugar

Place the whipping cream in the stand mixer and whip until soft peaks form. Add the icing sugar and continue to whip until stiff peaks form.

At this point, place the whipping cream bowl in the fridge so Max won't find it.

You might even allow one of the early risers to lick off the whipping cream beater.

To make the crêpes for about 6 people, you will require a double batch of the same batter used for the Dutch Apple Pancakes in this recipe book.

Cook all the crêpes, employing the use of 3 frying pans on the stove top to make the process go more quickly. Place each batch of crêpes on a pie plate in a toaster oven to keep them warm. Be careful not to overheat or they will dry out and become brittle making rolling difficult.

Quickly lay out a crêpe flat on a serving plate and ladle some of the blueberry filling along the middle. Roll up and repeat the process with another crêpe. Pour a bit of blueberry filling over the tops to garnish.

As you assemble the crêpes, have a helper deliver the plates to the breakfast table. Retrieve the prepared whipped cream from the fridge and place on the table so that each person can spoon plenty of whipped cream overtop.
