Ingredients

Beets

  • 6 Cups Beets

Sauce

  • ½ Cups Sour Cream
  • 2 Tbsp Mayonnaise
  • 2 Tbsp Chives
    snipped into small pieces
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Brown Sugar
  • ½ Tsp Dry Mustard
Rena's Mom's Hungarian Beet Sauce

Method

In a pot

  • 6 Cups Beets

Wash beets to remove any dirt and trim stems to 1/2 inch. Cover with water and boil until they are easily pierced with a fork, about 20 min or so. Drain and cover with cold water until beets can be handled. Slip off the skins and slice into a casserole dish. Cover to keep warm.

In a glass measuring cup

  • ½ Cups Sour Cream
  • 2 Tbsp Mayonnaise
  • 2 Tbsp Chives
    snipped into small pieces
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Brown Sugar
  • ½ Tsp Dry Mustard

Combine sauce ingredients and heat in the microwave for 1 min. Stir and heat until hot but do not boil. Pour over the warm beets and serve.
